Carrot Cake has been my all time favourite cake recipe. I love the moistness of the cake and slight sweetness of it, I especially love the creamy sweet icing the comes thick on top of it…mmmm.
The greatest thing about being on a sugar free diet is you can still enjoy the things you love. When I was serious about losing weight I made a commitment to not eat cakes, slices, chocolates, you know all the things you love but are really bad for you. But now I can make my cake and eat it too!
If you love carrot cake as much as I do, then don’t pass this recipe up. It’s quick and It’s easy and it’s very simple to make. In case you haven’t skipped straight to the recipe yet, It’s also Vegan, Gluten Free and of course sugar free.
The best part of it all is without the sugar and with all the healthy fats inside the recipe, after a few bites you’ve had enough. Ultimately it means you can enjoy the cake without being worried about overeating on it.
Simple Easy Sugar Free Carrot Cake:
Serves 6-8 (depending on sizes you want to give, I recommend 8 because it’s quite filling and high in healthy fats)
- 250g Carrot Cake
- 50g walnuts
- 50g Almonds
- 1 tsp. cinnamon
- 1/2 tsp. Nutmeg (I didn’t have any at the time, but it still tasted good)
- 1 tsp. baking powder
- pinch of salt
- 1/4 Cup natvia
- 15g Olive Oil (Macadamia Oil is highly recommend in other recipes if you have it)
- 1/4 cup coconut cream
- 2 tbsp. chia seeds (1 part chia seeds to 3 parts water)(you can use 2 eggs if you prefer non vegan)
Cashew Cream Vanilla Icing
- 150g cashews (soaked overnight or 4 hours if you’re prepared, otherwise it’s fine!)
- 150mls water
- stevia to taste or 2 tsp. natvia or any other sugar replacement you enjoy.
Step 1: preheat the oven to 170 degrees on a fan forced oven.
Step 2: Blend the walnuts and almonds to make a flour substitute
Step 3: grate your carrots in a food processor
Step 4: add rest of the ingredients into the food processor and mix till everything is blended
Step 5: Bake in the oven for 60 minutes
Step 6: Make Cashew Cream Icing and then refrigerate
Step 7: Enjoy your delicious guilt free carrot cake, moderately of course. You don’t want to blow too many calories 😉
