So In our household Arnotts Mint Slices is a favourite, very closely followed by Arnotts Tim Tams! But we literally had to ban them from our house because we would literally eat the whole packet…there was no self control. They are amazing.

So Joel was craving them last night and I was thinking It can’t be too hard to make a healthy Sugar Free version? Well I was right! They were quick, simple and easy to make.

That’s what I look for in all my recipes…because I hate spending all day in the kitchen.

This Biscuits were amazing. They turned out incredible, couple of things, there’s noway you can tell they’re sugar free and they aren’t as moorish as the real thing because of all the healthy fats in them…so winning!

Finally we can enjoy our mint slices without eating too much…Maybe I should Tim Tams next? What do you think.

No Bake Mint Slices Completely Sugar Free...Naturally Sweetened with Natvia and Stevia

No Bake Mint Slices Completely Sugar Free…Naturally Sweetened with Natvia and Stevia

 No Bake Sugar Free Mint Slice Recipe:
Makes 16 sugars

Biscuit Base Ingredients:

  • 1/2 cup buckwheat groats
  • 1/4 cup and 2tbsp. Cocoa Powder
  • 1 Cup almonds
  • 2 tbsp. Natvia
  • 2 tbsp. coconut oil
  • pinch of salt

Directions: 

  1. Blend the buckwheat groats and almonds in a food processor with the cocoa powder
  2. Then add the salt, natvia and coconut oil
  3. put it in your tin and freeze straight away

Mint Creme Ingredients: (Made with Vanilla Protein Powder)

  • 1 1/2 Scoops of Whey Vanilla Protein
  • 3 tsp. coconut oil
  • 1/4 cup Natvia
  • 200g shredded Coconut (makes 1/4 cup coconut butter)
  • 1/2 tsp. and 1/4 tsp. of peppermint essence

Directions: 

  1. Blend the Shredded coconut on high speed, and do this about 3-4 times to make coconut butter
  2. Then add the protein powder, natvia, peppermint essence and coconut oil
  3. spread it on top of your biscuit base and freeze

Alternatively Mint Creme Ingredients: (Made with Cashews)

  • 1 heaped cup of cashews, soaked overnight
  • ½ cup coconut oil
  • ½ cup Natvia
  • 200g shredded Coconut (makes 1/4 cup coconut butter)
  • 1/2 tsp. and 1/4 tsp. of peppermint essence
  • 1 teaspoon vanilla paste or essence
  • 2 pinches of salt

Directions: 

  1. Blend the Shredded coconut on high speed, and do this about 3-4 times to make coconut butter
  2. Then add the remaining ingredients and blend till smooth
  3. Spread it on top of your biscuit base and freeze

Chocolate Spread Recipe (Made With Vanilla Whey Protein)

  • 1 scoop of Protein Powder
  • 2 tbsp. cocoa powder
  • water

Directions: 

  1. Mix the protein powder and cocoa powder in a small bowl
  2. slowly add bits of water while mixing everything together
  3. Make a thick Icing texture
  4. Once the Peppermint creme has froze at the chocolate icing on top and freeze too!

Alternatively Chocolate Spread Recipe (Made With Cashews)

  • 3/4 cup cashews (soaked overnight)
  • 1/2 cup coconut oil
  • 1/2 cup cocoa powder
  • 1/4 cup Natvia
  • 1/2 tsp. vanilla essence/ paste

Directions:

  • Blend everything till nice and creamy
  • Spread the chocolate topping over the peppermint cream
  • Once the Peppermint creme has froze at the chocolate icing on top and freeze too!

once the Icing has set, cut up into 16 squares and enjoy with a beautiful tea or coffee…mmm!
